The million-dollar question is what application are you looking to use for your hosting? Consider the tools and scripting languages you plan to use – if you use PHP, Perl or MySQL, Linux is the way forward. If apps are Microsoft-specific ,eg. ASP, ASP.NET, ODBC, MS Access & MSSQL Databases, then Windows is what you need.
But in terms of stability, Linux is still the best bet.

it is the server you are hosting is running on linux os then it is linux hosting. if it is running on windows os then it is widows hosting.

Linux hosting is for computers running linux based Operating systems and windows for windows operating systems.
