If you don't know the difference , then it probably won't matter. Linux supports alot of Ecommerce and content management systems that windows doesn't. There is a thing called "cpanel" that is full of cool features for linux hosting, you can install your website in seconds using cpanel and "Fantastico" which features 1-click install of :
osCommerce
Zen Cart
Cubecart
Joomla
Mambo
Wordpress
and alot of other stuff that windows hosting probably won't support.
look here: http://www.samwilson3d.com
for a list of Linux hosts that have this feature

Hi, it depends on different things.
Price, linux is cheaper than windows server 2008, which is quite cool in my opinion.
Stability depends completely on the hardware of the machine, if u have hardware thats very linux compatible then it might be more stable.
Security, any OS can get broken in to sorry.
